I had the urge to "homemake" last nigh! Got a lot done:)


Makes 12 Muffins

For the Muffins:

2 Tbl poppy seeds

2/3 cup sugar
Grated zest 2 lemons
Juice of 1 lemon
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda and1/4 teaspoon salt


3/4 cup sour cream
2 large eggs
1 1/2 teaspoon pure vanilla extract
1 stick (8 tablespoons) unsalted butter, melted and cooled

For the Icing:

1 cup confectioners' sugar, sifted
2-3 tablespoons fresh lemon juice

Other tips: Put muffin tray on cookie sheet when baking and you can use muffin papers or just spray with pam.

Rub the sugar and the lemon zest until yellow, then whisk in other dry ingredients, then in separate bowl put together the sour cream, eggs, vanilla, and butter. Pour into flour mixture. Stir until mixed still with some bumps. Divide into muffin tins, bake 18-20 min at 400*.

Let cool 5 min and then take out of muffin tins, cool completely and then put on icing, or if you just want a thin glaze, put on while still hot and then let cool.
